The idea for this sandwich was born in June, when we started working on a “twin” to Astrospaziale. Same creative approach, same attention to detail—but a completely different flavor.
After months of research, Braciola Supernova is finally here. We started crafting it in June, armed with pots, ideas, and a burning desire to create something worthy of its twin—the iconic Genovese Astrospaziale.
Same creative process, same love for Neapolitan tradition, and that unmistakable PUOK style — but with a whole new personality.
From tradition to Supernova
When we created Genovese Astrospaziale, we were inspired by one of the pillars of Neapolitan cuisine: la Genovese. This time, our starting point was another traditional gem: the Neapolitan braciola — a flavorful bundle of meat, rolled and stuffed, slowly cooked in ragù until it becomes a true flavor bomb.
But how do you pack all the complexity of a braciola into a sandwich? Just putting the meat in bread wasn’t going to cut it. We wanted the braciola to explode—in the truest sense of the word. So, we decided to deconstruct it. To extract its heart, its essence, and transform it into something entirely new.
A thousand trials, one Big Bang
We got to work with countless tests and a whole lot of creativity. At first, just cooking the meat in ragù with all the traditional braciola ingredients didn’t deliver the explosion of flavor we envisioned. Then finally — the breakthrough: isolate the core of the braciola — those ingredients that make it extraordinary—and take them to the next level.
The result? A Neapolitan rosetta bun, shredded beef slow-cooked in ragù, a savory mix of raisins, pine nuts, and salami preserved in oil, a crispy pecorino wafer, and garlic-parsley mayo.
Every bite is, quite literally, a flavor explosion.
It’s the braciola — but like you’ve never experienced before.
Why “Braciola Supernova”?
This sandwich is the twin of Genovese Astrospaziale, but with its very own identity.
It’s the second chapter of the Cosmic Saga, a journey through Neapolitan tradition, reimagined in true PUOK fashion.
It’s called Supernova because — just like that astronomical phenomenon—it’s a spectacular explosion, the most dazzling one you’ll ever witness.
Braciola Supernova is available at PUOK stores in Vomero (Via Cilea) and Spaccanapoli (Piazzetta Nilo).
