Genovese Astrospaziale is a dream sandwich I've always wanted to make - waiting for PUOK to grow enough in spirit and structure. We didn't just add Genovese sauce as an ingredient; we reimagined Naples' queen of cuisine in a modern sandwich. The beef is slow-cooked and shredded in Genovese sauce (think Neapolitan pulled beef), seasoned with that rich onion gravy and aromatic blend. We grill some provolone, add flour-dusted fried onions to enhance texture and flavor, and finish with Genovese mayo-made by blending in the reduced onion sauce. Even the beef includes bits of cured ham rind. All wrapped in a crisp Neapolitan rosetta bun. How is this Genovese in a sandwich? "It's something astrospaziale!"
