Ten years ago we were in a “little orange hole” in the Vomero, with no seats and a menu of six sandwiches. Today that dream has stretched as far as Sant’Antimo, where the Oink Lab has opened its doors: a huge laboratory that houses the third PUOK store and will allow us to do everything we have ever dreamed of.
Egidio confided it to Santa Claus in yet another unforgettable video clip that racked up hundreds of thousands of views on social media: “I need something big to make all the sandwiches I’ve always dreamed of.” That “big thing” has become a reality: an 850 m² preparation lab and another 850 m² of storage. Inside are giant braziers, huge pots for genovese sauce and enough space to store a truckload of onions—because some recipes need time and patience. Thanks to this centralised hub we can standardise quality, experiment with new sandwiches and take our “marenna of the future” to a higher level.
The front of the Oink Lab hosts the new PUOK Sant’Antimo: Via Appia Sud km 17/900 is the out‑of‑town stop where you’ll find easy parking (no more waiting for a spot), ultra‑fast service (thanks to the lab, sandwiches are ready in just a few minutes) and comfortable spaces (indoor seating and a courtyard with benches and umbrellas). We remain faithful to the take‑away philosophy, but you can enjoy your sandwich sitting down with friends or family.
More than a laboratory: a system.
With Sant’Antimo, PUOK is no longer just “the sandwich shop in the Vomero” or “the Spaccanapoli store.” We have become a system: laboratories, trucks, shops and now a creative hub that integrates research and production. This will allow us to launch new formats, explore ingredients and techniques and offer ever‑changing experiences.
