Smashed One was born by chance - the kind of chance that happens to the right people. For months, we had been wondering how to serve customers a well-done burger that could live up to the quality of our medium-rare standard. What happens when a 200g patty needs to be well-done? It takes time - and too much time on the grill ruins even the best-quality meat. How could we avoid that pain, as meat lovers? We looked to the Americans, who often manage to serve well-done burgers that are still very juicy. So we took our 200g burger, split it into two 100g balls, smashed them flat on the grill to instantly create a delicious crust, drastically reducing the time the meat spends cooking. As always, we started with a simple build: meat, melted Emmental cheese, crispy bacon - double bacon, in one of those seemingly random but genius ideas - and our secret sauce. We immediately knew the result was a game-changer: juicy even when well-done, full of flavor. We also realized we didn't have the grill space to offer a "smashed" option for every burger on the menu. But that simple test sandwich, with its double bacon and signature sauce, had us jumping out of our seats. Every bite was a wow, every taste a smile. We couldn't ignore the magic born by accident. That was the birth of the Smashed One - the first and maybe the last smashed burger at PUOK, but one of our most flavorful and powerful ever.
