The story of Porco Verde

Porco Verde was born from the desire to make even more "Puok" of an old sandwich of the month that had been successful but didn't really feel like "Puok". It used to be called Umpa Lumpa and was a classic, overexposed bestseller with hamburger, provola, mortadella and pistachio. How could we use pistachio in an unusual and fantastic pairing? How could we let a pistachio cream express itself without letting the intense flavour of beef dominate? We needed a tender, melt in your mouth meat in which the pistachio could seep into every bite and literally explode in your mouth. Pork belly cooked at low temperature, provola, oven roasted potatoes and pistachio cream, this time made by us from shelled pistachios to obtain an irresistible texture. Umpa Lumpa wasn't bad, Porco Verde is much better.
