Piggy Blinder is a true source of pride for PUOK. For years, we tried mushroom sandwiches everywhere, but in all of them, the mushrooms ended up being just a faint, almost flavorless note. We wanted a sandwich where mushrooms were the real stars, exploding in every bite. We had already come close with an old limited-edition sandwich, the Super Mario, featuring a burger, provola cheese, and mushrooms in double texture. But with Piggy Blinder, our artisanal porchetta changed everything. The new mushroom cream, made from sautéed champignon mushrooms, seeps into every fold of the meat, and with every bite, as your teeth sink into the oven-roasted mushrooms (champignon and pleurotus), you get a true symphony of mushroom flavor. We're confident that finding another sandwich where mushrooms take center stage like this one would be no easy task.
