Nonna Assunta is one of those sandwiches at Puok that began as a personal memory but has become a shared one. Nonna Assunta was Egidio's maternal grandmother, and the memories of those loving lunches never faded. For that grandmother, food was a comfort, a hug, a surprise, a gift for her grandson. And among all the treats, that grandson had a favorite dish: oven-roasted potatoes loaded with onions.
If his grandmother called saying she was peeling potatoes, he'd drop everything - even a Super Santos ball stuck under a muffler - to rush over and enjoy that surprise, that hug, that comfort. If he arrived before it was ready, he'd sit cross-legged in front of the oven like an "Indian", and whenever she wasn't looking, he'd sneak a few potatoes mid-cooking.
Nonna Assunta was PUOK's very first special off-menu item - the first dream of that grown-up grandson once the first kitchen was built. Burger, smoked provola, roasted potatoes full of onions, pepper mayo.
