Demogorgon is perhaps the PUOK sandwich, the one that has one foot in the past and one in the future; its roots firmly planted in tradition, but with beautiful blossoms reaching toward what's next. PUOK was born in Naples, and what's the most iconic Neapolitan sandwich of all time? Sausage and friarielli - at every fair, every village festival, every old-school pub, in every home. But how could we make PUOK into a sausage and friarielli sandwich? "How could we make it a Django?" How could we preserve that authentic flavor while pushing it toward new notes of taste and image? We worked on it for weeks, until we identified two defining traits of sautéed Neapolitan friarielli: their bitterness, and that deeply southern taste of garlic sautéed in oil. What could balance the bitterness? A sweet note. And what was that sweet element we had tried just a few weeks earlier with garlic mayonnaise that blew our minds? Sweet potatoes. We thought: "Sweet potatoes to contrast the bitterness of the friarielli, with garlic as the bridge between two seemingly distant worlds." We tried it - and it worked. A brand-new flavor, with deep roots in culinary memory. Pork burger, smoked provola cheese, Neapolitan friarielli, American sweet potatoes, and garlic mayonnaise. Symbolic.
