Autumn Mania Veg is part of our vegetarian sandwich line (the Mania Veg line), which changes with the seasons while always keeping our incredibly delicious double fried provola cheese as the main ingredient. Each season brings its own vegetables and sauces to match: we started in summer with Hit Mania Veg, featuring sautéed eggplant and basil sauce; then came Winter Mania Veg, with friarielli in double texture; and Spring Mania Veg, inspired by traditional baked peas from the Neapolitan oven dish. With Autumn, we went back to an idea from years ago - when we first created the Super Mario, our challenge was to make a sandwich where the flavor of mushrooms would explode. We thought we had nailed it, but then came the Piggy Blinder, where replacing the hamburger with porchetta made our mushroom sauce shine even more. When we first tried Autumn Mania Veg, it was yet another epiphany: that same core concept, but without meat, reaching perhaps the peak of pure pleasure. Autumn Mania Veg is the mushroom sandwich, where the dual texture of the mushrooms is expressed at its best - it's almost like eating a mushroom risotto with your face in the plate. In my opinion, it's our best vegetarian sandwich ever - and one of the best overall in PUOK's entire history.
