Kekatz Delicatessen is a sandwich made with slices of brisket prepared by Pietro Esposito, a small butcher from Afragola with a passion for barbecue. Brisket is traditionally slow-smoked for hours. Pietro oven-roasts it after marinating for a day and cooking for 10 hours, using prime cuts with just the right fat content. To balance that rich meat, we add a sweet and sour cabbage and fresh pickle salad made by Sasi, Egidio's right-hand man. Then come our two most iconic sauces: our secret sauce and PUOK Sauce (a honey mustard blended with mayo). The name? Inspired by the world-famous pastrami sandwich at Katz's Delicatessen in NYC.
